Elaboration : Harvesting by hand takes place over approximately 3 days. Whole bunches of Pinot Noir are traditionally pressed: slowly and gently to avoid the grape skins colouring the juice.

Vinification : Fermented in temperature controlled, stainless steel vats kept at between 14-16°C to preserve the freshness and mineral quality of the wine. The wines are left on fine lees to enhance their structure and richness and then racked. Malolactic fermentation is blocked for our entire production. Bottling takes place in March and the wines are then transferred to our cellars where the prise de mousse takes place followed by approximately 20 months’ ageing

Vines more than 50 years old. Plantation density 8,500 vines/hectare. South and south-east facing plots on banks of chalk. Our vines are maintained according to strict and meticulous environmentally-friendly methods: no chemical products are used in any of our vineyards; ploughing promotes deep roots and we allow grass to grow between rows to control the yield.
